Original recipe serves 4

Fresh thyme

to taste

Instructions

  1. Melt the butter in a saucepan over medium heat.
  2. Add the finely chopped shallots to the pan and sauté until they become soft and translucent, about 2-3 minutes.
  3. Pour in the port wine, stir well, and bring the mixture to a simmer. Let it simmer for about 5 minutes to reduce the volume of the wine slightly and concentrate its flavors.
  4. Add the broth to the saucepan, followed by the honey, thyme sprig, salt, and pepper. Stir well to combine all the ingredients.
  5. Allow the sauce to simmer for about 10-15 minutes, or until it has thickened to your desired consistency.
  6. Remove the saucepan from the heat and take out the thyme sprig, discarding it.
  7. Taste the sauce and adjust the seasoning if needed. The sauce is now ready to serve over grilled meats or roasted vegetables.

Tips

  • 💡 For best results, use a good quality port wine that you would enjoy drinking.
  • 💡 The sauce can be stored in an airtight container in the refrigerator for up to one week. Gently reheat it before using.
