- Onion (1, diced)
- Carrots (2, chopped)
- Celery (2 stalks, chopped)
- Potatoes (2, diced)
- Turnips (1, diced)
- Leek (1, sliced)
- Garlic (2 cloves, minced)
- Vegetable broth (6 cups)
- Thyme (1 teaspoon, dried)
- Bay leaf (1)
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, chopped carrots, chopped celery, diced potatoes, diced turnip, sliced leek, and minced garlic. Sauté for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Sprinkle in the dried thyme, add the bay leaf, and pour in the vegetable broth. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to simmer. Cover and let it cook for about 30 minutes, or until all the vegetables are tender.
- Remove the bay leaf and discard it.
- Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a regular blender and blend until creamy.
- Return the pureed soup to the pot and heat over low until warmed through.
