Ingredients

Bacon
6 slices, chopped
Potatoes
2 medium, diced
Onion
1 small, diced
Garlic
2 cloves, minced
Eggs
4, beaten
Cheddar cheese
1 cup, shredded
Flour tortillas
4 (10-inch)
Salt
to taste
Pepper
to taste
Salsa
1 cup, for serving
Hot sauce
to taste, for serving

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels, reserving about 1 tablespoon of the bacon grease in the skillet.
  2. In the same skillet, add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden and crispy. Season with salt and pepper to taste.
  3. Add the diced onion and minced garlic to the skillet with the potatoes. Cook until the onion is translucent and softened, about 3-4 minutes.
  4. In a separate bowl, beat the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the potato mixture. Stir gently until the eggs are scrambled and fully cooked, about 3-4 minutes.
  5. Crumble the cooked bacon and stir it into the egg and potato mixture. Add the shredded cheddar cheese and stir until melted and fully combined.
  6. Warm the flour tortillas in the microwave for about 10 seconds to make them pliable.
  7. Spoon an equal amount of the bacon, potato, and egg mixture onto the center of each tortilla. Fold in the sides and roll up the burrito tightly.
  8. Serve the breakfast burritos warm with your favorite salsa and a dash of hot sauce for an added kick.
