- 2 medium, diced Potatoes
- 1 small, diced Onion
- 2 cloves, minced Garlic
- 4, beaten Eggs
- 1 cup, shredded Cheddar cheese

Instructions
- In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels, reserving about 1 tablespoon of the bacon grease in the skillet.

- Add the diced onion and minced garlic to the skillet with the potatoes. Cook until the onion is translucent and softened, about 3-4 minutes.
