
Potato and Bacon Breakfast Burrito

Ingredients
- Salt and pepper (to taste)
- Flour tortillas (4)
- Cheddar cheese (1 cup, shredded)
- Eggs (4)
- Garlic (2 cloves, minced)
- Onion (1 medium, diced)
- Potatoes (2 large, diced)
- Bacon (8 slices)
Instructions
- Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, add the diced potatoes and cook until golden and crispy.
- Add the onion and garlic to the skillet and cook until the onion is soft.
- In a separate bowl, beat the eggs and then add them to the skillet. Cook until the eggs are scrambled and fully cooked.
- Crumble the cooked bacon and add it to the skillet. Stir in the shredded cheese and season with salt and pepper.
- Warm the flour tortillas in the microwave for about 10 seconds.
- Spoon the bacon, potato, and egg mixture onto the center of each tortilla. Fold in the sides and then roll up the burrito.
- Serve the breakfast burritos warm with your favorite salsa or hot sauce.
