- Bell peppers
- 4, tops removed and seeds discarded
- Potatoes
- 4 medium, diced

- 1 teaspoon, plus extra to taste
- Black pepper

Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the prepared bell peppers upright in a baking dish. If necessary, trim the bottoms slightly to ensure they stand tall.
- In a large pot, bring salted water to a boil. Add the diced potatoes and cook until they are tender, about 15 minutes.
- Drain the potatoes and transfer them to a large mixing bowl.
- Mash the cooked potatoes until they are smooth. You can use a fork or a potato masher for this step.
