
Potato and Cheese Stuffed Bell Peppers
These delicious bell peppers are stuffed with a flavorful mixture of mashed potatoes and melted cheese.
Ingredients
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Garlic powder (1 teaspoon)
- Green onions (4, chopped)
- Cheddar cheese (1 cup, shredded)
- Potatoes (4 large, peeled and diced)
- Bell peppers (6)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Place the bell peppers in a baking dish and set aside.
- Boil the diced potatoes in a pot of salted water until tender, about 15 minutes.
- Drain the potatoes and transfer them to a mixing bowl.
- Mash the potatoes with a fork or potato masher until smooth.
- Add the shredded cheddar cheese, chopped green onions, garlic powder, salt, and pepper to the mashed potatoes. Mix well to combine.
- Spoon the potato and cheese mixture into the hollowed-out bell peppers.
- Drizzle the stuffed bell peppers with olive oil and sprinkle with additional salt and pepper.
- Bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender and the cheese is melted and golden.
- Serve hot and enjoy!
