Ingredients

Bell peppers
4, tops removed and seeds discarded
Potatoes
4 medium, diced
Cheddar cheese
2 cups, shredded
Green onions
4 stalks, finely chopped
Garlic powder
1 teaspoon
Salt
1 teaspoon, plus extra to taste
Black pepper
1/2 teaspoon, plus extra to taste
Olive oil
2 tablespoons

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the prepared bell peppers upright in a baking dish. If necessary, trim the bottoms slightly to ensure they stand tall.
  3. In a large pot, bring salted water to a boil. Add the diced potatoes and cook until they are tender, about 15 minutes.
  4. Drain the potatoes and transfer them to a large mixing bowl.
  5. Mash the cooked potatoes until they are smooth. You can use a fork or a potato masher for this step.
  6. To the mashed potatoes, add the shredded cheddar cheese, finely chopped green onions, garlic powder, salt, and black pepper. Mix everything together until it is thoroughly combined.
  7. Carefully spoon the potato and cheese mixture into the hollowed-out bell peppers, pressing down lightly to ensure they are fully packed.
  8. Drizzle the stuffed bell peppers with olive oil, and sprinkle extra salt and black pepper on top, to taste.
  9. Bake the stuffed peppers in the preheated oven for 25-30 minutes, or until the bell peppers are tender and the cheese on top is melted and golden brown.
  10. Allow the peppers to cool for a few minutes before serving. Enjoy your delicious Potato and Cheese Stuffed Bell Peppers while hot!

Tips

  • 💡 For a spicier kick, you can add a pinch of red pepper flakes to the potato mixture.
  • 💡 Feel free to substitute cheddar cheese with other types of cheese like mozzarella or Monterey Jack.
  • 💡 For added nutrition, mix in some cooked ground turkey or quinoa into the potato stuffing.
