Bell peppers
4, tops removed and seeds discarded
Potatoes
4 medium, diced
Cheddar cheese
2 cups, shredded
Green onions
4 stalks, finely chopped
Garlic powder
1 teaspoon
Salt
1 teaspoon, plus extra to taste
Black pepper
1/2 teaspoon, plus extra to taste
Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the prepared bell peppers upright in a baking dish. If necessary, trim the bottoms slightly to ensure they stand tall.
  3. In a large pot, bring salted water to a boil. Add the diced potatoes and cook until they are tender, about 15 minutes.
  4. Drain the potatoes and transfer them to a large mixing bowl.
  5. Mash the cooked potatoes until they are smooth. You can use a fork or a potato masher for this step.
  6. To the mashed potatoes, add the shredded cheddar cheese, finely chopped green onions, garlic powder, salt, and black pepper. Mix everything together until it is thoroughly combined.
