- Bell peppers
- 4, tops removed and seeds discarded
- Potatoes
- 4 medium, diced
- Cheddar cheese
- 2 cups, shredded
- Green onions
- 4 stalks, finely chopped
- Garlic powder
- 1 teaspoon
- Salt
- 1 teaspoon, plus extra to taste
- Black pepper
- 1/2 teaspoon, plus extra to taste
- Olive oil
- 2 tablespoons
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange the prepared bell peppers upright in a baking dish. If necessary, trim the bottoms slightly to ensure they stand tall.
- In a large pot, bring salted water to a boil. Add the diced potatoes and cook until they are tender, about 15 minutes.
- Drain the potatoes and transfer them to a large mixing bowl.
- Mash the cooked potatoes until they are smooth. You can use a fork or a potato masher for this step.
- To the mashed potatoes, add the shredded cheddar cheese, finely chopped green onions, garlic powder, salt, and black pepper. Mix everything together until it is thoroughly combined.
- Carefully spoon the potato and cheese mixture into the hollowed-out bell peppers, pressing down lightly to ensure they are fully packed.
- Drizzle the stuffed bell peppers with olive oil, and sprinkle extra salt and black pepper on top, to taste.
