Hearty Potato and Lentil Curry

  • Curry powder (2 tablespoons)
  • Potatoes (2 medium, peeled and cubed)
  • Lentils (1 cup, rinsed)
  • Vegetable broth (4 cups)
  • Coconut milk (1 can (14 oz))
  • Salt (to taste)
  • Black pepper (to taste)
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onions, minced garlic, and ginger, cooking until the onions become soft and translucent, about 5 minutes.
