Indulge in the warmth of this creamy potato soup, a classic dish that wraps you in comfort with each spoonful. Made with tender potatoes, fragrant garlic, and sweet onions, this soup brings together simple ingredients to create a rich, velvety texture that's perfect for chilly evenings. Traditionally, potato soup has roots in various cultures, often reflecting the humble yet hearty nature of the potato itself. This version is enhanced with a splash of heavy cream for that luxurious finish, making it a delightful choice for both family dinners and special occasions.

Servings: 6

Ingredients

Butter
2 tablespoons
Onion
1 large, chopped
Garlic
2 cloves, minced
Potatoes
4 medium, peeled and diced
Chicken broth
4 cups
Heavy cream
1 cup
Salt
to taste
Pepper
to taste
Chives
for garnish, chopped

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté for about 5 minutes until the onion becomes translucent and fragrant.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.
  4. Using a blender or immersion blender, carefully puree the soup until it reaches a smooth and creamy consistency. If using a traditional blender, allow the soup to cool slightly before blending in batches.
  5. Return the pureed soup to the pot over low heat. Stir in the heavy cream, mixing well. Season with salt and pepper to taste.
  6. Simmer the soup for an additional 5 minutes, allowing the flavors to meld and the soup to heat through.
  7. Serve the potato soup hot, garnished with chopped chives for a fresh, vibrant touch.
