Indulge in the warmth of this creamy potato soup, a classic dish that wraps you in comfort with each spoonful. Made with tender potatoes, fragrant garlic, and sweet onions, this soup brings together simple ingredients to create a rich, velvety texture that's perfect for chilly evenings. Servings: 6
Ingredients
- Butter
- 2 tablespoons
- Onion
- 1 large, chopped
- Garlic
- 2 cloves, minced
- Potatoes
- 4 medium, peeled and diced
- Chicken broth
- 4 cups
- Heavy cream
- 1 cup
- Salt
- to taste
- Pepper
- to taste
- Chives
- for garnish, chopped
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté for about 5 minutes until the onion becomes translucent and fragrant.
- Stir in the diced potatoes and pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Using a blender or immersion blender, carefully puree the soup until it reaches a smooth and creamy consistency. If using a traditional blender, allow the soup to cool slightly before blending in batches.
- Return the pureed soup to the pot over low heat. Stir in the heavy cream, mixing well. Season with salt and pepper to taste.
- Simmer the soup for an additional 5 minutes, allowing the flavors to meld and the soup to heat through.
- Serve the potato soup hot, garnished with chopped chives for a fresh, vibrant touch.
