Ingredients

Olive oil
2 tablespoons
Smoked sausage
1 pound, sliced
Cabbage
1/2 head, chopped
Vegetable broth
6 cups
Salt

Black pepper

Thyme

Bay leaves

2 stalks, chopped
Leek
1, sliced
Garlic
4 cloves, minced
Onion
1, chopped
Parsnips
2, peeled and diced
Turnips
2, peeled and diced
Potatoes
2, peeled and diced
Carrots
3, peeled and sliced

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, minced garlic, sliced leek, and chopped celery. Sauté until softened, about 5 minutes.
  3. Stir in the carrots, potatoes, turnips, parsnips, bay leaves, thyme, salt, and pepper, mixing well to combine.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 minutes.
  6. After 30 minutes, add the chopped cabbage and sliced smoked sausage to the pot. Stir gently and continue to simmer for an additional 15 minutes, or until all the vegetables are tender.
  7. Before serving, remove the bay leaves and adjust the seasoning with additional salt and pepper if needed.
