Potée de Légumes Racine is a hearty French vegetable stew made with root vegetables, herbs, and spices.
Ingredients
- Smoked sausage (8 ounces, sliced)
- Cabbage (1/2 small head, chopped)
- Vegetable broth (4 cups)
- Salt and pepper (to taste)
- Thyme (1 teaspoon)
- Bay leaves (2)
- Celery (2 stalks, chopped)
- Leek (1, sliced)
- Garlic (3 cloves, minced)
- Onion (1 large, chopped)
- Parsnips (2 medium, peeled and chopped)
- Turnips (2 medium, peeled and chopped)
- Potatoes (4 medium, peeled and chopped)
- Carrots (4 medium, peeled and chopped)
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the onion, garlic, leek, and celery. Sauté until softened, about 5 minutes.
- Add the carrots, potatoes, turnips, parsnips, bay leaves, thyme, salt, and pepper. Stir well to combine.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 30 minutes.
- Add the cabbage and smoked sausage to the pot. Stir and continue to simmer for another 15 minutes, or until the vegetables are tender.
- Remove the bay leaves before serving.
- Serve hot and enjoy!
