Indulge in this delightful Canadian comfort food, where crispy golden fries meet the rich, savory goodness of beef gravy, generously topped with fresh cheese curds that melt and stretch with every bite. Originating from Quebec in the late 1950s, poutine has become a beloved dish across Canada and beyond, celebrated for its simple yet satisfying combination of flavors and textures. Perfect for a late-night snack or a hearty meal, this version of poutine maintains its authenticity while inviting you to savor every mouthful!

Ingredients

Potatoes
4 large, russet or yukon gold, peeled and cut into thick fries
Vegetable oil
for frying (approximately 4 cups)
Salt
to taste
Cheese curds
2 cups, fresh and preferably white cheddar
Beef gravy
2 cups, homemade or store-bought

Instructions

  1. Peel the potatoes and cut them into thick fries, about 1/2 inch wide.
  2. Rinse the cut potatoes in cold water to remove excess starch, then soak them in water for at least 30 minutes to enhance crispiness.
  3. Drain and pat the potatoes dry thoroughly with paper towels.
  4. In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C) over medium-high heat.
  5. Fry the potatoes in batches, without overcrowding, until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season immediately with salt.
  6. In a separate saucepan, heat the beef gravy over medium heat until hot, stirring occasionally to prevent sticking.
  7. On a serving platter, layer the crispy fries, then generously top with fresh cheese curds.
  8. Pour the hot beef gravy over the fries and cheese curds, allowing the cheese to melt slightly.
  9. Repeat the layering until all fries, cheese curds, and gravy are used.
  10. Serve immediately while hot, and enjoy your homemade poutine!
