Cajun Prawn and Grits

Ingredients
- Chicken broth
- 4 cups
- Grits
- 1 cup
- Unsalted butter
- 4 tablespoons
- Garlic
- 3 cloves, minced
- Onion
- 1 medium, diced
- Bell pepper
- 1 medium, diced (any color)
- Prawns
- 1 pound, peeled and deveined
- Cajun seasoning
- 2 tablespoons
- Salt
- to taste
- Pepper
- to taste
- Green onions
- 2, chopped (for garnish)
Instructions
- In a medium saucepan, bring the chicken broth to a boil over medium-high heat.
- Slowly whisk in the grits, reducing the heat to low. Cook for about 20-25 minutes, stirring occasionally, until the grits are creamy and tender. If the grits become too thick, you can add a bit more chicken broth to reach your desired consistency.
- While the grits are cooking, heat 2 tablespoons of butter in a large skillet over medium heat.
- Add the minced garlic, diced onion, and bell pepper to the skillet. Sauté until the vegetables are softened and fragrant, about 5 minutes.
- Season the prawns with Cajun seasoning, salt, and pepper. Add them to the skillet and cook for 3-4 minutes per side, or until they turn pink and are cooked through.
- Once the grits are done, fold in the remaining 2 tablespoons of butter for extra creaminess.
- To serve, spoon the creamy grits onto plates and top with the Cajun prawns and vegetable mixture.
