
Prawn and Mango Skewers
These delicious prawn and mango skewers are perfect for summer grilling. The combination of juicy prawns and sweet mangoes creates a burst of flavors in every bite.
Ingredients
- Skewers (8, soaked in water)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Garlic (2 cloves, minced)
- Olive oil (2 tablespoons)
- Lime (1, juiced)
- Red onion (1, cut into chunks)
- Red bell pepper (1, cut into chunks)
- Mango (1 large, ripe, peeled and cubed)
- Prawns (16 large, peeled and deveined)
Instructions
- In a bowl, combine the olive oil, minced garlic, lime juice, paprika, salt, and pepper to make the marinade.
- Add the prawns to the marinade and toss to coat. Let them marinate for at least 10 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated prawns, mango cubes, red bell pepper chunks, and red onion chunks onto the soaked skewers, alternating between ingredients.
- Place the skewers on the preheated grill and cook for about 3-4 minutes per side, or until the prawns are cooked through and slightly charred.
- Remove the skewers from the grill and serve hot.
- Optional: Garnish with fresh cilantro and serve with a side of lime wedges for squeezing over the skewers.
