Ingredients
- Linguine pasta
- 8 ounces
- Olive oil

- Garlic
- 4 cloves, minced
- Mushrooms

- Prawns
- 1 pound, peeled and deveined
- White wine
- 1/2 cup
- Salt

- Black pepper

- Fresh parsley
- 1/4 cup, chopped
- Grated parmesan cheese
- 1/2 cup
Instructions
- Cook the linguine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Add the sliced mushrooms to the skillet and cook for about 5 minutes, stirring occasionally until they release their moisture and turn golden brown.
- Push the mushrooms to one side of the skillet and add the prawns. Cook for 2-3 minutes until they turn pink and opaque, stirring occasionally.
- Pour in the white wine and let it simmer for 2-3 minutes to reduce slightly, scraping up any browned bits from the bottom of the skillet.
- Add the cooked linguine to the skillet along with a splash of reserved pasta water if needed. Toss everything together to coat the pasta with the sauce.
- Season with salt and pepper to taste. Sprinkle with chopped parsley and grated Parmesan cheese before serving.
