Red onion
1/2 cup, finely chopped
Tomato

Cucumber
1/2 cup, diced
Avocado
1, diced
Cilantro
1/4 cup, chopped
Jalapeno
1, finely chopped (adjust to taste)
Salt
to taste
Olive oil

Instructions

  1. In a mixing bowl, combine the peeled and deveined prawns with the freshly squeezed lime juice. Ensure the prawns are fully submerged and let them marinate in the refrigerator for about 10 minutes, or until they turn opaque.
  2. While the prawns are marinating, prepare your vegetables. In a separate bowl, mix the chopped red onion, diced tomato, cucumber, avocado, cilantro, and jalapeno. Season with salt to taste and gently fold to combine, taking care not to mash the avocado.
  3. Once the prawns have marinated and become opaque, drain any excess lime juice and gently fold the marinated prawns into the vegetable mixture. Stir carefully to combine all the ingredients evenly.
