Ingredients

Prawns
500g, cleaned and deveined
Coconut milk
400ml
Onion
1 large, finely chopped
Garlic
3 cloves, minced
Ginger
1 tablespoon, minced
Tomatoes
2 medium, chopped
Curry powder
2 tablespoons
Salt
to taste
Fresh coriander leaves
for garnish
Vegetable oil
2 tablespoons

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Once hot, add the finely chopped onion and sauté until soft and golden, about 5-7 minutes.
  2. Add the minced garlic and ginger to the pan, stirring continuously for about 1 minute until fragrant.
  3. Incorporate the chopped tomatoes and curry powder, cooking for an additional 5-6 minutes until the tomatoes break down and the spices meld beautifully.
  4. Add the cleaned prawns to the mixture and cook until they turn pink, roughly 3-4 minutes.
  5. Pour in the coconut milk and add salt to taste. Stir well, then bring the mixture to a gentle simmer. Allow it to cook for 10 minutes, letting the sauce thicken and the flavors deepen.
  6. Remove from heat and garnish with fresh coriander leaves. Serve hot with steamed rice or warm naan.
