- 500g, cleaned and deveined
- Coconut milk
- 400ml
- Onion
- 1 large, finely chopped
- Garlic
- 3 cloves, minced

- 1 tablespoon, minced
- Tomatoes
- 2 medium, chopped
- Curry powder
- 2 tablespoons
- Salt

- Fresh coriander leaves

- Vegetable oil

Instructions
- Heat the vegetable oil in a large pan over medium heat. Once hot, add the finely chopped onion and sauté until soft and golden, about 5-7 minutes.
- Add the minced garlic and ginger to the pan, stirring continuously for about 1 minute until fragrant.
- Incorporate the chopped tomatoes and curry powder, cooking for an additional 5-6 minutes until the tomatoes break down and the spices meld beautifully.
- Add the cleaned prawns to the mixture and cook until they turn pink, roughly 3-4 minutes.
- Pour in the coconut milk and add salt to taste. Stir well, then bring the mixture to a gentle simmer. Allow it to cook for 10 minutes, letting the sauce thicken and the flavors deepen.
