Servings: 4

Ingredients

  • Salt and pepper (to taste)
  • Green onions (2, finely chopped)
  • Sesame oil (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Eggs (2, beaten)
  • Peas (1 cup, frozen)
  • Carrots (1 cup, diced)
  • Ginger (1 tablespoon, grated)
  • Garlic (2 cloves, minced)
  • Vegetable oil (2 tablespoons)
  • Prawns (1 lb, shelled and deveined)
  • Cooked rice (3 cups, preferably day-old)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the prawns and cook until they turn pink and are cooked through, about 2-3 minutes per side. Remove the prawns from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil. Sauté the garlic and ginger until aromatic, about 1 minute.
  4. Add the diced carrots and peas to the skillet. Cook until the vegetables are tender, approximately 3-4 minutes.
  5. Push the cooked vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble until fully cooked. Mix the scrambled eggs with the vegetables.
  6. Add the cold cooked rice to the skillet. Stir-fry for 2-3 minutes, breaking up any clumps of rice.
  7. Drizzle the soy sauce and sesame oil over the rice. Stir well to evenly distribute the sauces.
  8. Return the cooked prawns to the skillet. Toss everything together to combine well.
  9. Season your fried rice with salt and pepper to taste. Adjust seasoning if necessary.
  10. Garnish the dish with the finely chopped green onions. Serve hot and savor the authentic flavors of your Prawn Fried Rice.
