Spicy Prawn Linguine

Ingredients
- 250g Linguine
- 300g, peeled and deveined Prawns
- 3 tablespoons Olive oil
- 3 cloves, minced Garlic
- 1, finely sliced (or to taste) Red chilli
- 300g, halved Cherry tomatoes
- 150ml White wine
- 2 tablespoons, chopped Fresh parsley

Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine.
- While the linguine cooks, heat the olive oil in a large frying pan over medium heat. Add the minced garlic and sliced red chilli, cooking for 1-2 minutes until fragrant but not burnt.
- Add the prawns to the pan and cook for 2-3 minutes, stirring occasionally, until they turn pink and opaque. Remove the prawns from the pan and set aside.
- Increase the heat to high, pour in the white wine, and let it bubble for about a minute to reduce slightly. Add the halved cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
- Add the drained linguine to the pan, along with the reserved pasta water if needed to loosen the sauce. Return the prawns to the pan and toss everything together. Cook for an additional 2 minutes, allowing the flavors to meld.
- Stir in the chopped parsley and season with salt and pepper to taste. Serve immediately, garnished with extra parsley if desired.
