Ingredients
- Avocado
- 2 ripe, halved and pitted
- Cooked prawns
- 1 cup, chopped
- Red onion
- 1/4 cup, finely chopped
- Cucumber
- 1/2 cup, diced
- Cherry tomatoes
- 1/2 cup, quartered
- Fresh cilantro
- 1/4 cup, chopped
- Lime juice
- 2 tablespoons
- Salt
- 1/4 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
Instructions
- Start by cutting the avocados in half lengthwise and gently removing the pits.
- Using a spoon, scoop out a small amount of flesh from each avocado half to create a hollow space for the prawn filling. Set the scooped avocado flesh aside.
- In a mixing bowl, combine the chopped cooked prawns, finely chopped red onion, diced cucumber, quartered cherry tomatoes, chopped cilantro, lime juice, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- If desired, mash the reserved avocado flesh and mix it into the prawn filling for added creaminess.
- Divide the prawn mixture evenly among the hollowed avocado halves, generously filling each one.
- Serve immediately for the freshest taste, garnished with additional cilantro if desired.
Tips
- For an extra kick, add diced jalapeño or a sprinkle of chili flakes to the prawn mixture.
- Feel free to substitute prawns with crab meat or cooked shrimp for a different flavor profile.
- This dish pairs beautifully with a side of mixed greens or a citrus salad.
