Crispy Prosciutto and Egg Breakfast Sandwich

Ingredients

Prosciutto
2 slices
Egg

Avocado
1/2, sliced
English muffin

Mayonnaise
1 tablespoon
Lettuce
1-2 leaves
Tomato
2 slices
Salt and pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the prosciutto slices on a baking sheet and bake for 8-10 minutes, or until they are crispy. Be careful not to burn them.
  3. While the prosciutto is in the oven, heat a non-stick skillet over medium heat. Crack the egg into the skillet, season with salt and pepper, and fry to your desired doneness.
  4. Toast the English muffin until it's golden brown. Spread the mayonnaise evenly on both halves.
  5. Start building your sandwich on one half of the English muffin. First, layer the lettuce, followed by the tomato slices, and then the sliced avocado.
  6. Add the crispy prosciutto and top with the fried egg. Finish by topping with the other half of the English muffin.
