Ingredients
- Pork tenderloin
- 1 (about 1.5 pounds)
- Prosciutto
- 6-8 slices
- Fresh spinach
- 2 cups, cooked and chopped
- Mozzarella cheese
- 1 cup, shredded
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon, to taste
- Black pepper
- 1/2 teaspoon, to taste
- Garlic powder
- 1 teaspoon
- Kitchen twine or toothpicks
- as needed, for securing the roll
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the pork tenderloin by making a lengthwise cut down the center, ensuring not to cut all the way through. Open it up and flatten it using a meat mallet for even cooking.
- Layer the prosciutto slices evenly over the flattened pork, followed by the cooked spinach and shredded mozzarella cheese.
- Sprinkle the filling with garlic powder, salt, and pepper to enhance the flavors.
- Carefully roll up the pork tenderloin tightly, starting from one end. Secure the roll with kitchen twine or toothpicks to hold the stuffing inside.
- In an oven-safe skillet, heat olive oil over medium-high heat. Once hot, sear the stuffed pork tenderloin on all sides until browned (about 3-4 minutes per side).
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- Once cooked, remove the skillet from the oven and let the pork tenderloin rest for 5 minutes before slicing.
- Slice the stuffed pork tenderloin into medallions and serve with your favorite side dishes.
Tips
- For added flavor, consider marinating the pork tenderloin in olive oil, garlic, and herbs for a few hours before stuffing.
- Feel free to substitute the mozzarella with provolone or goat cheese for a different flavor profile.
- Serve with a light salad or roasted vegetables to complement the richness of the pork.
