1 cup (softened)
Granulated sugar
1/2 cup
Brown sugar
1 cup (packed)
Pumpkin puree
1 cup
Egg
1 large
Vanilla extract
1 teaspoon
Semi-sweet chocolate chips
1 cup

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin pie spice until well combined.
  3. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2-3 minutes.
  4. Add in the pumpkin puree, egg, and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined. Avoid overmixing to keep the cookies tender.
  6. Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
  7. Using a tablespoon or a cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look set but still soft.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
