Pumpkin puree
1 cup
Eggs
2 large
Granulated sugar
1/4 cup
All-purpose flour
1 cup
Baking powder
1 teaspoon
Salt
1/2 teaspoon
Cinnamon
1 teaspoon
Nutmeg
1/4 teaspoon
Vegetable oil
for frying
Powdered sugar
for dusting

Instructions

  1. In a large mixing bowl, combine the pumpkin puree, eggs, and granulated sugar. Whisk until smooth and well-blended.
  2. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  3. Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until shimmering but not smoking.
  5. Using a spoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the skillet.
  6. Fry the fritters for about 2-3 minutes on each side or until they are golden brown. Use a slotted spoon to turn them and remove them from the oil.
  7. Transfer the fritters to a plate lined with paper towels to drain excess oil.
  8. Dust the warm fritters with powdered sugar before serving and enjoy them warm!
