- Baking powder

- 1 teaspoon
- Nutmeg
- 1/4 teaspoon
- Vegetable oil
- for frying
- Powdered sugar
- for dusting
Instructions
- In a large mixing bowl, combine the pumpkin puree, eggs, and granulated sugar. Whisk until smooth and well-blended.
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until shimmering but not smoking.
- Using a spoon or a small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the skillet.
- Fry the fritters for about 2-3 minutes on each side or until they are golden brown. Use a slotted spoon to turn them and remove them from the oil.
- Transfer the fritters to a plate lined with paper towels to drain excess oil.
