Ingredients

Roasted pumpkin seeds
1/4 cup
Soft-boiled eggs
4
Green onions
2, sliced
Ginger
1 tablespoon, minced
Garlic
2 cloves, minced
Sesame oil
1 tablespoon
Soy sauce
2 tablespoons
Ramen noodles
4 packages
Vegetable broth
4 cups
Pumpkin puree
1 can (15 oz.)

Instructions

  1. In a large pot, combine the pumpkin puree and vegetable broth. Bring to a boil over medium heat.
  2. Add the ramen noodles to the pot and cook according to the package instructions. Once cooked, set aside.
  3. In a separate pan, heat the sesame oil over medium heat. Once hot, add the minced garlic and ginger. Cook until they are fragrant and slightly golden, about 2 minutes.
  4. Add the soy sauce to the garlic and ginger, stirring well to combine.
  5. Divide the cooked ramen noodles among four bowls. Pour the pumpkin broth over the noodles, making sure each bowl gets an equal amount.
  6. Top each bowl with the garlic-ginger sauce, sliced green onions, a soft-boiled egg, and a sprinkle of roasted pumpkin seeds.
  7. Serve immediately while hot, and slurp away to your heart's content!
