Ingredients
- Roasted pumpkin seeds
- 1/4 cup
- Soft-boiled eggs
- 4
- Green onions
- 2, sliced
- Ginger
- 1 tablespoon, minced
- Garlic
- 2 cloves, minced
- Sesame oil
- 1 tablespoon
- Soy sauce
- 2 tablespoons
- Ramen noodles
- 4 packages
- Vegetable broth
- 4 cups
- Pumpkin puree
- 1 can (15 oz.)
Instructions
- In a large pot, combine the pumpkin puree and vegetable broth. Bring to a boil over medium heat.
- Add the ramen noodles to the pot and cook according to the package instructions. Once cooked, set aside.
- In a separate pan, heat the sesame oil over medium heat. Once hot, add the minced garlic and ginger. Cook until they are fragrant and slightly golden, about 2 minutes.
- Add the soy sauce to the garlic and ginger, stirring well to combine.
- Divide the cooked ramen noodles among four bowls. Pour the pumpkin broth over the noodles, making sure each bowl gets an equal amount.
- Top each bowl with the garlic-ginger sauce, sliced green onions, a soft-boiled egg, and a sprinkle of roasted pumpkin seeds.
- Serve immediately while hot, and slurp away to your heart's content!
Tips
- For a spicier kick, add a dash of chili oil or some red pepper flakes to the garlic-ginger sauce.
