Ingredients

- Milk
- 3/4 cup
- Pumpkin puree
- 1/2 cup
- Vegetable oil
- 2 tablespoons

Instructions
- In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, pumpkin pie spice, and salt until well combined.
- In a separate bowl, whisk together the pumpkin puree, milk, beaten egg, and vegetable oil until smooth and homogenous.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix; it's okay if a few lumps remain.
- Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil or cooking spray.
- For each pancake, pour 1/4 cup of batter onto the skillet. Cook until bubbles begin to form on the surface, approximately 2-3 minutes. Flip the pancake and cook for another 1-2 minutes, or until golden brown on both sides.
- Repeat the process with the remaining batter, greasing the skillet as needed.
