All-purpose flour
1 cup
Brown sugar
2 tablespoons
Baking powder
2 teaspoons
Pumpkin pie spice
1 teaspoon
Salt
1/4 teaspoon
Egg
1, beaten
Milk
3/4 cup
Pumpkin puree
1/2 cup
Vegetable oil
2 tablespoons
Maple syrup
for serving
Ground cinnamon
for garnish (optional)

Instructions

  1. In a large bowl, whisk together the all-purpose flour, brown sugar, baking powder, pumpkin pie spice, and salt until well combined.
  2. In a separate bowl, whisk together the pumpkin puree, milk, beaten egg, and vegetable oil until smooth and homogenous.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix; it's okay if a few lumps remain.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it with vegetable oil or cooking spray.
  5. For each pancake, pour 1/4 cup of batter onto the skillet. Cook until bubbles begin to form on the surface, approximately 2-3 minutes. Flip the pancake and cook for another 1-2 minutes, or until golden brown on both sides.
  6. Repeat the process with the remaining batter, greasing the skillet as needed.
  7. Serve the pancakes warm, drizzled with maple syrup and a sprinkle of ground cinnamon if desired.
