Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, steam the quahogs in their shells until they open, about 10 minutes. Once opened, carefully remove the meat and chop it finely, reserving the shells for stuffing.
- In a skillet, melt the butter over medium heat. Add the chopped onion, minced garlic, and diced bell pepper. Sauté until the vegetables are softened, about 5 minutes.
- In a large mixing bowl, combine the chopped quahog meat, sautéed vegetables, breadcrumbs, grated Parmesan, chopped parsley, salt, and black pepper. Mix until well combined.
- Spoon the stuffing mixture into the reserved quahog shells, packing it gently but firmly.
- Arrange the stuffed quahogs on a baking sheet and bake for 20 minutes, or until the tops are golden brown and the stuffing is heated through.
- Serve warm, garnished with additional parsley if desired.
Tips
- For added flavor, consider incorporating a splash of white wine into the sautéed vegetables.
- You can substitute quahogs with other types of clams if desired, but be sure to adjust cooking times accordingly.
- Serve with a side of lemon wedges to enhance the dish's briny flavor.
