Servings: 4

Ingredients

Quark
1 cup (about 250g)
Potatoes
2 medium, peeled and boiled
All-purpose flour
1 cup (120g)
Eggs
2 large
Granulated sugar
1/4 cup (50g)
Unsalted butter
4 tablespoons (for frying)
Apple sauce
1 cup (for serving)
Powdered sugar
for dusting

Instructions

  1. In a large mixing bowl, combine the quark, mashed potatoes, all-purpose flour, eggs, and granulated sugar. Mix until a smooth and homogeneous dough forms, ensuring all ingredients are well incorporated.
  2. Once the dough is ready, divide it into small portions, roughly the size of a golf ball. Flatten each portion gently into a round cake, about 1/2 inch thick.
  3. Heat the unsalted butter in a frying pan over medium heat. Once melted and bubbling, carefully add the cakes to the pan, making sure not to overcrowd them to allow even cooking.
  4. Fry the cakes for about 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
  5. Once cooked, transfer the cakes to a plate lined with paper towels to absorb any excess butter.
  6. Dust the warm Quarkkeulchen with powdered sugar and serve immediately with apple sauce on the side for dipping.
