Ingredients
- Dried apricots
- 1 cup
- Water
- 3 cups (2 for soaking, 1 for syrup)
- Granulated sugar
- 1/2 cup
- Cardamom powder
- 1/2 teaspoon
- Almonds
- 1/4 cup, slivered or chopped
- Whipped cream
- 1 cup, for serving
Instructions
- Soak the dried apricots in 2 cups of water overnight to soften them.
- The next day, drain the apricots, reserving the soaking water. Place the apricots in a saucepan with the reserved soaking water and cook over medium heat until they become soft, approximately 15-20 minutes.
- Once softened, remove the apricots from the heat. Allow them to cool slightly, then carefully remove the seeds and extract the almond-like nuts from the center. Set the nuts aside.
- In a separate pan, combine the sugar and 1 cup of water. Bring to a boil to create a simple syrup, stirring until the sugar dissolves completely.
- Add the cooked apricots and cardamom powder into the syrup, stirring gently to coat. Simmer on low heat for an additional 10-15 minutes, allowing the flavors to meld and the syrup to thicken slightly.
- To serve, spoon the warm apricot mixture into bowls. Garnish generously with slivered almonds and top each serving with a dollop of whipped cream.
