Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with butter or non-stick spray.
- In a large mixing bowl, whisk together the sugar, eggs, melted butter, flour, milk, fresh cheese (or ricotta), and cinnamon until the mixture is smooth and well combined.
- On a lightly floured surface, roll out the puff pastry to about 1/8 inch thickness. Cut out circles that fit snugly into the muffin tin cups.
- Press each pastry circle into the greased muffin tin, ensuring the sides are well-formed.
- Carefully pour the cheese mixture into each pastry shell, filling them about 3/4 full to allow for rising.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is set and slightly puffed.
- Remove from the oven and allow the tarts to cool in the tin for about 10 minutes before carefully transferring them to a wire rack.
- Serve the Queijadas de Sintra at room temperature, dusted with a sprinkle of cinnamon for an extra touch of flavor.
Tips
- For a richer flavor, you can add a teaspoon of vanilla extract to the cheese mixture.
