This creamy, cheesecake-like treat is made with fresh cheese, sugar, and a hint of cinnamon, creating a dessert that is both simple and indulgent. Ingredients

Fresh cheese
500 grams (or ricotta as a substitute)
Granulated sugar
200 grams
Eggs
4 large
All-purpose flour
100 grams
Unsalted butter
100 grams, melted
Lemon zest
1 tablespoon
Cinnamon
1 teaspoon
Vanilla extract
1 teaspoon (optional)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a 9-inch baking dish with butter.
  2. In a large mixing bowl, combine the fresh cheese and sugar. Use a hand mixer or a whisk to blend until the mixture is smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition to ensure they are fully incorporated.
  4. Stir in the melted butter, followed by the flour, lemon zest, cinnamon, and vanilla extract (if using). Mix until the batter is smooth and well combined.
  5. Pour the mixture into the prepared baking dish and smooth the top with a spatula for an even bake.
  6. Bake in the preheated oven for about 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Once baked, remove the quesada from the oven and allow it to cool in the dish for about 15 minutes. Then transfer it to a wire rack to cool completely before slicing.
  8. Serve chilled or at room temperature, and enjoy this delightful Cantabrian treat!
