Ingredients
- Fresh cheese
- 500 grams (or ricotta as a substitute)
- Granulated sugar
- 200 grams
- Eggs
- 4 large
- All-purpose flour
- 100 grams
- Unsalted butter
- 100 grams, melted
- Lemon zest
- 1 tablespoon
- Cinnamon
- 1 teaspoon
- Vanilla extract
- 1 teaspoon (optional)
Instructions
- Preheat the oven to 180°C (350°F) and grease a 9-inch baking dish with butter.
- In a large mixing bowl, combine the fresh cheese and sugar. Use a hand mixer or a whisk to blend until the mixture is smooth and creamy.
- Add the eggs one at a time, mixing well after each addition to ensure they are fully incorporated.
- Stir in the melted butter, followed by the flour, lemon zest, cinnamon, and vanilla extract (if using). Mix until the batter is smooth and well combined.
- Pour the mixture into the prepared baking dish and smooth the top with a spatula for an even bake.
- Bake in the preheated oven for about 1 hour, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove the quesada from the oven and allow it to cool in the dish for about 15 minutes. Then transfer it to a wire rack to cool completely before slicing.
- Serve chilled or at room temperature, and enjoy this delightful Cantabrian treat!
