Ingredients

Flour tortillas
4 (8-inch)
Shredded cheddar cheese
2 cups
Vegetable oil
2 tablespoons
Fresh salsa
1 cup
Fresh cilantro
1/4 cup, chopped
Sour cream
1/2 cup
Tomato
1, diced (for salsa)
Red onion
1/4 cup, diced (for salsa)
Jalapeño
1, minced (optional, for salsa)
Lime juice
1 tablespoon (for salsa)
Salt
to taste (for salsa)

Instructions

  1. In a small bowl, prepare the fresh salsa: Combine diced tomato, red onion, minced jalapeño (if using), lime juice, chopped cilantro, and salt to taste. Mix well and set aside.
  2. Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil.
  3. Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
  4. Spread half of the prepared salsa over the cheese, allowing the flavors to meld.
  5. Top with another tortilla, pressing down gently.
  6. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.
  7. Carefully flip the quesadilla and add the remaining tablespoon of oil if necessary; cook for another 2-3 minutes, or until the cheese is melted and the second tortilla is golden brown and crispy.
  8. Remove the quesadilla from the skillet and cut it into wedges. Repeat the process with the remaining tortillas, cheese, and salsa.
  9. Serve hot with a dollop of sour cream and extra salsa on the side, garnished with fresh cilantro.
