- Flour tortillas

- Shredded cheddar cheese

- Vegetable oil
- 2 tablespoons

- Sour cream
- 1/2 cup
- Tomato
- 1, diced (for salsa)
- Red onion
- 1/4 cup, diced (for salsa)
- Jalapeño
- 1, minced (optional, for salsa)
- Lime juice
- 1 tablespoon (for salsa)
- Salt

Instructions
- In a small bowl, prepare the fresh salsa: Combine diced tomato, red onion, minced jalapeño (if using), lime juice, chopped cilantro, and salt to taste. Mix well and set aside.
- Heat a large skillet over medium heat and add 1 tablespoon of vegetable oil.
- Place one tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
- Spread half of the prepared salsa over the cheese, allowing the flavors to meld.
- Top with another tortilla, pressing down gently.
- Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy.
- Carefully flip the quesadilla and add the remaining tablespoon of oil if necessary; cook for another 2-3 minutes, or until the cheese is melted and the second tortilla is golden brown and crispy.
- Remove the quesadilla from the skillet and cut it into wedges. Repeat the process with the remaining tortillas, cheese, and salsa.
- Serve hot with a dollop of sour cream and extra salsa on the side, garnished with fresh cilantro.
