- 4 large Flour tortillas
- 2 cups, cooked and shredded Chicken breast
- 2 cups, shredded Cheddar cheese
- 1, sliced Red bell pepper
- 1, sliced Green bell pepper
- 1, sliced Onion
- 1, sliced (remove seeds for less heat) Jalapeno
- 2 tablespoons Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1/2 cup (for serving) Sour cream
- 1/2 cup (for serving) Salsa

Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sliced onion, red bell pepper, green bell pepper, and jalapeno to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Stir in the shredded chicken, cumin, paprika, salt, and black pepper. Mix well and cook for an additional 2 minutes to heat through.
- Remove the chicken and vegetable mixture from the skillet and set aside.
