Cheesy Chicken Quesadillas

Ingredients
- Flour tortillas
- 4 large
- Chicken breast
- 2 cups, cooked and shredded
- Cheddar cheese
- 2 cups, shredded
- Red bell pepper
- 1, sliced
- Green bell pepper
- 1, sliced
- Onion
- 1, sliced
- Jalapeno
- 1, sliced (remove seeds for less heat)
- Olive oil
- 2 tablespoons
- Cumin
- 1 teaspoon
- Paprika
- 1 teaspoon
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Sour cream
- 1/2 cup (for serving)
- Salsa
- 1/2 cup (for serving)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the sliced onion, red bell pepper, green bell pepper, and jalapeno to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Stir in the shredded chicken, cumin, paprika, salt, and black pepper. Mix well and cook for an additional 2 minutes to heat through.
- Remove the chicken and vegetable mixture from the skillet and set aside.
- In the same skillet, place a tortilla and sprinkle half of it with a generous handful of shredded cheddar cheese.
- Spread a portion of the chicken mixture over the cheesy half of the tortilla.
- Fold the tortilla in half to create a half-moon shape.
- Cook the quesadilla for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown and crispy.
- Repeat the process with the remaining tortillas and filling.
- Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
