
Quesadillas
These cheesy chicken quesadillas are filled with tender chicken, melted cheese, and flavorful spices.
Ingredients
- Salsa (for serving)
- Sour cream (for serving)
- Salt and pepper (to taste)
- Paprika (1 teaspoon)
- Cumin (1 teaspoon)
- Jalapeno (1, seeded and diced)
- Onion (1, thinly sliced)
- Green bell pepper (1, thinly sliced)
- Red bell pepper (1, thinly sliced)
- Cheddar cheese (2 cups, shredded)
- Flour tortillas (8)
- Chicken breast (2, cooked and shredded)
Instructions
- In a large skillet, heat some oil over medium heat.
- Add the sliced onion, bell peppers, and jalapeno. Cook until the vegetables are softened, about 5 minutes.
- Add the shredded chicken, cumin, paprika, salt, and pepper. Stir to combine and cook for another 2 minutes.
- Remove the chicken mixture from the skillet and set aside.
- Place a tortilla in the skillet and sprinkle with a handful of shredded cheese.
- Spread a portion of the chicken mixture over half of the tortilla.
- Fold the tortilla in half to create a half-moon shape.
- Cook the quesadilla for 2-3 minutes on each side, until the cheese is melted and the tortilla is crispy.
- Repeat with the remaining tortillas and filling.
- Serve the quesadillas hot with sour cream and salsa on the side.
