- 2 cups, shredded Monterey Jack cheese
- 1 cup, shredded Cheddar cheese

- 2 cloves, minced Garlic
- 1 medium, diced Tomato
- 1, seeded and diced (adjust for heat preference) Jalapeno
- 1/4 cup, chopped (for garnish) Cilantro
- 8, for serving Tortillas

Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened, approximately 4-5 minutes.
- Add the diced tomato and jalapeno to the skillet, stirring to combine. Cook for an additional 2 minutes until the tomatoes are slightly softened.
- Return the cooked chorizo to the skillet and mix well with the sautéed vegetables. Remove from heat.
- In an oven-safe dish, layer half of the shredded Monterey Jack cheese on the bottom.
- Spread the chorizo and vegetable mixture evenly over the cheese layer.
- Top with the remaining Monterey Jack cheese and the shredded cheddar cheese.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with chopped cilantro. Serve hot with warm tortillas for dipping.
