Fresh cilantro
1/4 cup, chopped
Jalapeno
1, thinly sliced
Cheddar cheese
1/2 cup, shredded
Monterey Jack cheese
1/2 cup, shredded
Chorizo
1/2 pound
Hot dog buns

Instructions

  1. Preheat your grill to medium-high heat.
  2. Place the hot dogs on the grill and cook until they are heated through and have visible grill marks, approximately 5 minutes.
  3. While the hot dogs are grilling, heat a skillet over medium heat. Add the chorizo and cook until it is fully cooked, about 10 minutes. Break up the chorizo into small crumbles as it cooks.
  4. Lightly toast the hot dog buns on the grill, cut side down, for about 1 minute.
  5. Place a grilled hot dog in each bun and evenly distribute the cooked chorizo on top.
  6. Sprinkle the shredded Monterey Jack and Cheddar cheese over the hot dogs with chorizo.
  7. Return the hot dogs to the grill, close the lid, and cook until the cheese is completely melted, about 2 minutes.
  8. To finish, top each hot dog with sliced jalapeno and a sprinkle of chopped cilantro. Serve immediately while hot.
