Queso Fundido Hot Dog

Ingredients
- Fresh cilantro
- 1/4 cup, chopped
- Jalapeno
- 1, thinly sliced
- Cheddar cheese
- 1/2 cup, shredded
- Monterey Jack cheese
- 1/2 cup, shredded
- Chorizo
- 1/2 pound
- Hot dog buns

Instructions
- Preheat your grill to medium-high heat.
- Place the hot dogs on the grill and cook until they are heated through and have visible grill marks, approximately 5 minutes.
- While the hot dogs are grilling, heat a skillet over medium heat. Add the chorizo and cook until it is fully cooked, about 10 minutes. Break up the chorizo into small crumbles as it cooks.
- Lightly toast the hot dog buns on the grill, cut side down, for about 1 minute.
- Place a grilled hot dog in each bun and evenly distribute the cooked chorizo on top.
- Sprinkle the shredded Monterey Jack and Cheddar cheese over the hot dogs with chorizo.
- Return the hot dogs to the grill, close the lid, and cook until the cheese is completely melted, about 2 minutes.
- To finish, top each hot dog with sliced jalapeno and a sprinkle of chopped cilantro. Serve immediately while hot.
