Quibebe is a traditional Brazilian comfort food that celebrates the rich flavors of pumpkin, enhanced by the aromatic notes of garlic and onion. Ingredients
- Pumpkin
- 4 cups, diced
- Onion
- 1 large, diced
- Garlic
- 3 cloves, minced
- Olive oil
- 2 tablespoons
- Cilantro
- 1/4 cup, chopped
- Salt

- Black pepper
- to taste
- Vegetable broth
- 1 cup (optional for added flavor)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic. Sauté for about 5 minutes, or until the onion becomes soft and translucent.
- Stir in the diced pumpkin, coating it well with the oil, onion, and garlic mixture.
- If using, pour in the vegetable broth to enhance the flavor and help steam the pumpkin.
- Cover the pot and allow the pumpkin to cook until soft, about 20 minutes, stirring occasionally.
- Once soft, use a potato masher or fork to mash the pumpkin until it reaches a smooth consistency.
- Season the quibebe with salt and black pepper to taste. Stir in the chopped cilantro for a fresh finish.
- Serve the quibebe warm, alongside rice or crusty bread for a satisfying meal.
