Quibebe is a traditional Brazilian comfort food that celebrates the rich flavors of pumpkin, enhanced by the aromatic notes of garlic and onion. Originating from the Northeast region of Brazil, this hearty dish is not only a staple during the colder months but also a vibrant representation of Brazilian culinary heritage. Ingredients

Pumpkin
4 cups, diced
Onion
1 large, diced
Garlic
3 cloves, minced
Olive oil
2 tablespoons
Cilantro
1/4 cup, chopped
Salt
to taste
Black pepper
to taste
Vegetable broth
1 cup (optional for added flavor)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic. Sauté for about 5 minutes, or until the onion becomes soft and translucent.
  3. Stir in the diced pumpkin, coating it well with the oil, onion, and garlic mixture.
  4. If using, pour in the vegetable broth to enhance the flavor and help steam the pumpkin.
  5. Cover the pot and allow the pumpkin to cook until soft, about 20 minutes, stirring occasionally.
  6. Once soft, use a potato masher or fork to mash the pumpkin until it reaches a smooth consistency.
  7. Season the quibebe with salt and black pepper to taste. Stir in the chopped cilantro for a fresh finish.
  8. Serve the quibebe warm, alongside rice or crusty bread for a satisfying meal.
