Quinoa Veggie Burger
These Quinoa Veggie Burgers are a scrumptious and healthful alternative to traditional burgers. Bursting with protein-packed quinoa, nutrient-rich spinach, and hearty black beans, they are a flavor sensation that delights the palate. Originating from the Andean region in South America, quinoa has been a superfood staple for thousands of years and gives these burgers a unique, nutty taste.

Ingredients
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
- Egg
- 1, large
- Bread crumbs
- 1/2 cup
- Black beans
- 1 can (15 ounces), drained and rinsed
- Spinach
- 1 cup, fresh and chopped
- Carrot
- 1, medium, grated
- Garlic
- 2 cloves, minced
- Onion
- 1, small, chopped
- Olive oil
- 2 tablespoons
- Water
- 2 cups
- Quinoa
- 1 cup, uncooked
Instructions
- Rinse the quinoa under cold water until the water runs clear.
- In a saucepan, bring the 2 cups of water to a boil. Stir in the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water has been absorbed.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, approximately 5 minutes.
- Add the grated carrot and chopped spinach to the skillet and continue cooking until the spinach is wilted, about 2-3 minutes.
- In a large bowl, mash the drained black beans with a fork until it forms a chunky paste. To this, add the cooked quinoa, sautéed vegetable mixture, bread crumbs, and egg. Season with salt and pepper.
- Mix the ingredients until well combined, then shape the mixture into four patties.
- Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the patties and cook until they are browned and heated through, about 4 minutes per side.
- Serve these delicious veggie burgers with your favorite toppings and condiments.
