Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Season the rack of bison generously with salt and black pepper on all sides.
  3. In an oven-safe skillet, heat the olive oil over high heat until shimmering.
  4. Sear the rack of bison on all sides until browned, about 2 minutes per side. This step locks in the flavors and juices.
  5. Add the minced garlic, chopped rosemary, and thyme to the skillet, stirring to combine and infuse the oil with flavor.
