Ingredients

Lemon juice
2 tablespoons
Parmesan cheese
1/2 cup, grated
Pine nuts
1/4 cup
Garlic
2 cloves
Fresh mint leaves
1 cup
Olive oil
1/4 cup
Salt and pepper
to taste
Rack of lamb
1 (about 2 pounds)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Liberally season the rack of lamb with salt and pepper on all sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is shimmering, add the rack of lamb and sear on all sides until browned, about 5 minutes total.
  4. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the lamb is cooked to your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F; for medium, 135-140°F; and for medium-well, 140-145°F.
  5. While the lamb is roasting, prepare the mint pesto. In a food processor, combine the fresh mint leaves, garlic, pine nuts, grated Parmesan cheese, and lemon juice. Process until smooth, adding olive oil as needed to reach your desired consistency.
  6. Once the lamb is done, remove it from the oven and let it rest for at least 10 minutes. This allows the juices to redistribute throughout the meat, resulting in a moister and more flavorful dish.
  7. Slice the rack of lamb into individual chops and generously drizzle with the mint pesto before serving. Enjoy!
