Rack of Lamb with Mint Pesto

Ingredients
- Lemon juice
- 2 tablespoons
- Parmesan cheese
- 1/2 cup, grated
- Pine nuts
- 1/4 cup
- Garlic
- 2 cloves
- Fresh mint leaves
- 1 cup
- Olive oil
- 1/4 cup
- Salt and pepper

- Rack of lamb
- 1 (about 2 pounds)
Instructions
- Preheat your oven to 400°F (200°C).
- Liberally season the rack of lamb with salt and pepper on all sides.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is shimmering, add the rack of lamb and sear on all sides until browned, about 5 minutes total.
- Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the lamb is cooked to your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F; for medium, 135-140°F; and for medium-well, 140-145°F.
- While the lamb is roasting, prepare the mint pesto. In a food processor, combine the fresh mint leaves, garlic, pine nuts, grated Parmesan cheese, and lemon juice. Process until smooth, adding olive oil as needed to reach your desired consistency.
- Once the lamb is done, remove it from the oven and let it rest for at least 10 minutes. This allows the juices to redistribute throughout the meat, resulting in a moister and more flavorful dish.
- Slice the rack of lamb into individual chops and generously drizzle with the mint pesto before serving. Enjoy!
