
Rainbow Veggie Wraps
These colorful and nutritious rainbow veggie wraps are packed with fresh vegetables and a flavorful sauce.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 tablespoon)
- Honey (1 tablespoon)
- Lime juice (2 tablespoons)
- Fresh cilantro (1/4 cup, chopped)
- Avocado (1, sliced)
- Purple cabbage (1 cup, shredded)
- Carrot (1, julienned)
- Cucumber (1, thinly sliced)
- Orange bell pepper (1, thinly sliced)
- Yellow bell pepper (1, thinly sliced)
- Red bell pepper (1, thinly sliced)
- Whole wheat tortillas (2)
Instructions
- In a small bowl, whisk together lime juice, honey, Dijon mustard, salt, and pepper to make the sauce.
- Lay out the tortillas and spread the sauce evenly on each tortilla.
- Layer the sliced bell peppers, cucumber, carrot, purple cabbage, avocado, and cilantro on top of the sauce.
- Roll up the tortillas tightly, tucking in the sides as you go.
- Slice the wraps in half and serve.
