Rainbow Veggie Wraps

These colorful and nutritious rainbow veggie wraps are packed with fresh vegetables and a flavorful sauce.

Ingredients

  • Salt and pepper (to taste)
  • Dijon mustard (1 tablespoon)
  • Honey (1 tablespoon)
  • Lime juice (2 tablespoons)
  • Fresh cilantro (1/4 cup, chopped)
  • Avocado (1, sliced)
  • Purple cabbage (1 cup, shredded)
  • Carrot (1, julienned)
  • Cucumber (1, thinly sliced)
  • Orange bell pepper (1, thinly sliced)
  • Yellow bell pepper (1, thinly sliced)
  • Red bell pepper (1, thinly sliced)
  • Whole wheat tortillas (2)

Instructions

  1. In a small bowl, whisk together lime juice, honey, Dijon mustard, salt, and pepper to make the sauce.
  2. Lay out the tortillas and spread the sauce evenly on each tortilla.
  3. Layer the sliced bell peppers, cucumber, carrot, purple cabbage, avocado, and cilantro on top of the sauce.
  4. Roll up the tortillas tightly, tucking in the sides as you go.
  5. Slice the wraps in half and serve.
