Servings: 8
Ingredients
- Fresh raspberries
- 2 cups
- Granulated sugar
- 1/2 cup
- Lemon juice
- 2 tablespoons
- Water
- 1/4 cup (optional, for a thinner consistency)
Instructions
- In a medium saucepan, combine the fresh raspberries, granulated sugar, lemon juice, and water (if using).
- Place the saucepan over medium heat and gently stir the mixture, allowing the raspberries to release their juices.
- Continue cooking for about 10-15 minutes, stirring occasionally, until the raspberries break down and the mixture thickens to your desired consistency.
- Once thickened, remove the saucepan from heat and let the compote cool to room temperature.
- Transfer the cooled compote to a jar or container and refrigerate. It can be stored for up to one week.
- Serve the raspberry compote over ice cream, pancakes, waffles, yogurt, or even as a topping for cheesecake.
