Servings: 16
Ingredients
- Vanilla extract
- 1 teaspoon
- Ground cinnamon
- 1/2 teaspoon
- Brown sugar
- 1/2 cup
- Rolled oats
- 1 cup
- Fresh raspberries
- 1 cup
- Raspberry jam
- 1 cup
- Unsalted butter, cold and cubed
- 1 cup
- Salt
- 1/4 teaspoon
- Granulated sugar
- 1/2 cup
- All-purpose flour
- 2 cups
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper, ensuring the sides are well-covered for easy removal.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed butter. Cut the butter into the dry ingredients using a pastry cutter or your fingers, until the mixture resembles coarse crumbs.
- Set aside 1 cup of the crumb mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to form a crust.
- Spread the raspberry jam evenly over the crust, ensuring every inch is covered. Scatter the fresh raspberries evenly on top of the jam.
- In a separate mixing bowl, combine the reserved crumb mixture, rolled oats, brown sugar, ground cinnamon, and vanilla extract. Mix well to combine.
- Sprinkle the oat crumble mixture evenly over the raspberries, covering the entire surface.
- Bake in the preheated oven for 35-40 minutes, until the top is golden brown and the raspberry filling is bubbling. If the top starts to brown too quickly, cover it loosely with aluminum foil.
- Remove the bars from the oven and let them cool completely in the baking dish before slicing into squares. This will ensure clean, firm bars.
- Enjoy these delicious Raspberry Crumble Bars as is, or for a decadent treat, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
