Experience a burst of tart, juicy raspberries nestled between a buttery crust and a crumbly oat topping in these delightful Raspberry Crumble Bars. Vanilla extract

Brown sugar

Rolled oats
1 cup
Fresh raspberries
1 cup
Raspberry jam
1 cup
Unsalted butter, cold and cubed
1 cup
Salt
1/4 teaspoon
Granulated sugar
1/2 cup
All-purpose flour
2 cups

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper, ensuring the sides are well-covered for easy removal.
  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, cubed butter. Cut the butter into the dry ingredients using a pastry cutter or your fingers, until the mixture resembles coarse crumbs.
  3. Set aside 1 cup of the crumb mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared baking dish to form a crust.
  4. Spread the raspberry jam evenly over the crust, ensuring every inch is covered. Scatter the fresh raspberries evenly on top of the jam.
  5. In a separate mixing bowl, combine the reserved crumb mixture, rolled oats, brown sugar, ground cinnamon, and vanilla extract. Mix well to combine.
  6. Sprinkle the oat crumble mixture evenly over the raspberries, covering the entire surface.
  7. Bake in the preheated oven for 35-40 minutes, until the top is golden brown and the raspberry filling is bubbling. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  8. Remove the bars from the oven and let them cool completely in the baking dish before slicing into squares. This will ensure clean, firm bars.
