Indulge in these delightful homemade raspberry almond granola bars, a perfect blend of chewy and crunchy textures. Packed with wholesome ingredients and bursting with the sweet-tart flavor of dried raspberries, these bars make for an ideal snack on-the-go or a nutritious breakfast option. With a hint of almond butter and a touch of honey, each bite is a satisfying treat that brings a taste of nature's goodness right to your fingertips. Serves 12

Ingredients

Old-fashioned oats
2 cups
Almond butter
1/2 cup
Honey
1/3 cup
Dried raspberries
1 cup
Chopped almonds
1/2 cup
Ground flaxseed
1/4 cup
Vanilla extract
1 teaspoon
Salt
1/4 teaspoon

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal.
  2. In a large mixing bowl, combine the old-fashioned oats, almond butter, honey, dried raspberries, chopped almonds, ground flaxseed, vanilla extract, and salt. Stir thoroughly until all ingredients are evenly incorporated.
  3. Transfer the mixture into the prepared baking dish. Using a spatula or your hands, press the mixture down firmly to create an even layer, ensuring it is tightly packed.
  4. Bake in the preheated oven for 20-25 minutes, or until the edges turn a golden brown and the center is set.
  5. Once baked, remove the dish from the oven and allow it to cool completely in the baking dish on a wire rack.
  6. After cooling, lift the granola slab out of the dish using the parchment paper overhang. Cut into bars of your desired size.
  7. Store the granola bars in an airtight container at room temperature for up to a week, or refrigerate for longer freshness.

Tips

  • 💡 Feel free to substitute dried raspberries with other dried fruits such as cranberries or apricots for a different flavor.
  • 💡 For added sweetness, you can mix in dark chocolate chips or a sprinkle of cinnamon.
