Rava Kesari
Rava Kesari, also known as Sheera, is a beloved South Indian dessert that tantalizes your taste buds with its rich, buttery flavor and unique aroma. Made from roasted semolina, this sweet treat is infused with the warmth of cardamom and the luxurious touch of saffron, making it a perfect indulgence for festive occasions and celebrations. The delightful crunch of golden cashews and the sweetness of plump raisins add a wonderful texture, making each bite a heavenly experience. Ingredients
- Ghee
- 3 tablespoons (divided)
- Semolina (rava)
- 1 cup
- Sugar
- 1 cup
- Water
- 2 cups
- Cardamom powder
- 1 teaspoon
- Saffron strands
- a pinch
- Raisins
- 1/4 cup
- Cashews
- 1/4 cup
Instructions
- In a medium pan, heat 1 tablespoon of ghee over medium heat. Add the cashews and raisins, frying them until the cashews turn golden brown and the raisins puff up. Remove them from the pan and set aside.
- In the same pan, add the semolina and roast it on low flame, stirring continuously, until it turns golden brown and releases a nutty aroma. Remove the roasted semolina from the pan and set aside.
- In the same pan, add the water and sugar. Stir well and cook until the sugar completely dissolves.
- Gradually add the roasted semolina to the sugar-water mixture while stirring continuously to prevent lumps from forming.
- Cover the pan and cook on low flame for about 5-7 minutes until the semolina absorbs all the water and becomes soft.
- Add the remaining 2 tablespoons of ghee, cardamom powder, saffron strands, fried cashews, and raisins to the cooked semolina. Mix well to combine all ingredients.
- Continue to cook on low flame for another 2-3 minutes, allowing the flavors to meld together.
- Remove from heat and let it cool slightly before serving. Rava Kesari can be served warm or at room temperature.
Tips
- For a richer flavor, add a handful of grated coconut or a few tablespoons of milk towards the end of cooking.
- You can also experiment with different nuts like almonds or pistachios for variety.
- Adjust the sweetness according to your taste by varying the amount of sugar.
