Hearty Red Bean Soup
This Hearty Red Bean Soup is a comforting bowl of warmth, perfect for chilly days. Rich in color and flavor, this soup combines tender red beans with a medley of aromatic vegetables and spices. Traditionally enjoyed in various cultures, red bean soup not only nourishes the body but also warms the soul. This recipe is a delightful reminder of home-cooked meals that bring families together, making it a timeless classic for all ages.
Instructions
- Rinse the soaked red beans under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery to the pot. Cook for an additional 3-4 minutes until the vegetables are softened.
- Stir in the rinsed red beans, bay leaf, and water. Bring the mixture to a boil over high heat.
- Once boiling, reduce the heat to low and let it simmer, uncovered, for about 2 hours, or until the beans are tender and the flavors meld beautifully.
- Remove the bay leaf. Using a blender or an immersion blender, puree the soup until smooth, or leave it slightly chunky for texture, according to your preference.
- Return the blended soup to the heat, and season with salt and pepper to taste. Let it simmer for another 5-10 minutes.
- Serve hot, garnished with fresh herbs or a drizzle of olive oil if desired.
Tips
- For a spicier version, add a diced jalapeño or a pinch of cayenne pepper during the sautéing process.
- You can also add cooked sausage or bacon for a heartier flavor.
- Serve with crusty bread or over rice for a fulfilling meal.
