This refreshing and colorful slaw is made with red cabbage, crisp apples, and a tangy dressing.

Ingredients

  • Salt and pepper (to taste)
  • Dijon mustard (1 teaspoon)
  • Honey (1 tablespoon)
  • Apple cider vinegar (2 tablespoons)
  • Greek yogurt (1/4 cup)
  • Mayonnaise (1/2 cup)
  • Fresh parsley (1/4 cup, chopped)
  • Red onion (1/4 cup, thinly sliced)
  • Carrots (2 medium, grated)
  • Apples (2 medium, thinly sliced)
  • Red cabbage (1 small head, shredded)

Instructions

  1. In a large bowl, combine the shredded red cabbage, sliced apples, grated carrots, sliced red onion, and chopped parsley.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the cabbage mixture and toss until well coated.
  4. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
