2 medium, cored and thinly sliced (preferably tart varieties like granny smith)
Carrots
2 medium, grated
Red onion
1/2 medium, thinly sliced
Fresh parsley
1/4 cup, chopped
Mayonnaise
1/4 cup
Greek yogurt
1/4 cup
Apple cider vinegar
2 tablespoons
Honey
1 tablespoon
Dijon mustard
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions
