
Red Cabbage and Apple Slaw
This refreshing and colorful slaw is made with red cabbage, crisp apples, and a tangy dressing.
Ingredients
- Salt and pepper (to taste)
- Dijon mustard (1 teaspoon)
- Honey (1 tablespoon)
- Apple cider vinegar (2 tablespoons)
- Greek yogurt (1/4 cup)
- Mayonnaise (1/2 cup)
- Fresh parsley (1/4 cup, chopped)
- Red onion (1/4 cup, thinly sliced)
- Carrots (2 medium, grated)
- Apples (2 medium, thinly sliced)
- Red cabbage (1 small head, shredded)
Instructions
- In a large bowl, combine the shredded red cabbage, sliced apples, grated carrots, sliced red onion, and chopped parsley.
- In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the cabbage mixture and toss until well coated.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
