Serves 6

Ingredients

Red cabbage
4 cups, shredded
Apples
2 medium, cored and thinly sliced (preferably tart varieties like granny smith)
Carrots
2 medium, grated
Red onion
1/2 medium, thinly sliced
Fresh parsley
1/4 cup, chopped
Mayonnaise
1/4 cup
Greek yogurt
1/4 cup
Apple cider vinegar
2 tablespoons
Honey
1 tablespoon
Dijon mustard
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. In a large bowl, combine the shredded red cabbage, sliced apples, grated carrots, sliced red onion, and chopped parsley. Toss lightly to mix the ingredients evenly.
  2. In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth and well combined.
  3. Pour the dressing over the cabbage mixture and toss until all the ingredients are well coated with the dressing.
  4. Cover the slaw and refrigerate for at least 1 hour before serving. This allows the flavors to meld beautifully.
  5. Serve chilled as a refreshing side dish alongside grilled meats or as a light lunch on its own.

Tips

  • 💡 For a spicier kick, consider adding a pinch of cayenne pepper or some sliced jalapeños.
  • 💡 You can substitute the apples with pears for a different flavor profile.
  • 💡 Feel free to add nuts such as walnuts or pecans for additional crunch and healthy fats.
