Servings: 2

Ingredients

Butter
2 tablespoons
Red onion
1 medium, thinly sliced
Eggs
4 large
Brie cheese
100 grams, sliced
Salt
to taste
Black pepper
to taste
Fresh herbs (optional)
for garnish (such as chives or parsley)

Instructions

  1. In a non-stick skillet, heat 1 tablespoon of butter over medium heat until melted.
  2. Add the sliced red onion to the skillet and sauté for about 5 minutes, stirring occasionally, until the onions become soft and lightly caramelized. Remove the onions from the skillet and set aside.
  3. In a mixing bowl, whisk the eggs until well beaten. Season the mixture with salt and black pepper to taste.
  4. In the same skillet, add the remaining tablespoon of butter and allow it to melt over medium heat.
  5. Pour the beaten eggs into the skillet, tilting the skillet to ensure the eggs cover the bottom evenly. Let the eggs cook undisturbed for 1-2 minutes, or until the edges begin to set.
  6. Once the edges are set, place the sautéed red onions and sliced brie cheese on one half of the omelette.
  7. Using a spatula, carefully fold the other half of the omelette over the filling.
  8. Cook for an additional minute, or until the cheese is melted and the omelette is cooked to your desired doneness.
  9. Gently slide the omelette onto a plate, garnish with fresh herbs if desired, and serve hot.
