Instructions
- Preheat the oven to 325°F (165°C).
- Rub the roast beef evenly with the minced garlic, salt, and black pepper. Ensure all sides of the roast are well-coated.
- Heat the olive oil in a large, oven-safe pot or Dutch oven over medium-high heat.
- Once the oil is hot, add the roast beef and sear on all sides until it is browned. This should take about 3-4 minutes per side.
- Pour the Red Osier sauce and water over the seared roast beef. Make sure the roast is well coated with the sauce.
- Cover the pot and place it in the preheated oven. Cook for about 3 hours, or until the roast beef is tender and easily pulls apart with a fork.
- Remove the pot from the oven and let the roast rest for 10-15 minutes before slicing. This allows the juices to redistribute throughout the roast, ensuring a moist and flavorful result.
- Slice the roast and serve it with the sauce from the pot. Enjoy!
Tips
- For a more pronounced garlic flavor, you can make small incisions in the roast and stuff these with slivers of garlic before cooking.
- For a thicker sauce, remove the roast from the pot after cooking and simmer the sauce over medium heat until it reduces to your desired consistency.
