- Powdered sugar (1 3/4 cups)
- Cocoa powder (2 tablespoons)
- Granulated sugar (1/2 cup)
- Egg whites (3 large, at room temperature)
- Red food coloring (1 tablespoon (or to desired color))
- Unsalted butter (4 tablespoons, softened)
- Cream cheese (8 ounces, softened)
- Vanilla extract (1 teaspoon)
Instructions
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour, powdered sugar, and cocoa powder. Process until the mixture is fine and well-combined. Sift the mixture into a bowl to ensure a lump-free batter.
- In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form. Gradually add the granulated sugar while continuing to beat until stiff peaks form. Add the red food coloring and mix until evenly incorporated, achieving a vibrant hue.
- Gently fold the almond flour mixture into the beaten egg whites using a spatula. Be careful not to deflate the egg whites; the batter should be smooth and shiny, and fall in ribbons from the spatula.
- Transfer the batter to a piping bag fitted with a round tip. Pipe the batter onto the prepared baking sheets in 1-inch circles, spacing them about 1 inch apart.
- Let the macarons rest at room temperature for 30 minutes, or until a skin forms on the surface, which will help them rise beautifully during baking.
