Instructions
- In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, salt, and granulated sugar until well combined.
- In a separate bowl, whisk together the buttermilk, eggs, red food coloring, vanilla extract, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a griddle or non-stick skillet over medium heat and lightly brush it with vegetable oil.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then carefully flip and cook for another 1-2 minutes, or until cooked through and lightly browned.
- While the pancakes are cooking, prepare the cream cheese frosting. In a small bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
- Stack the pancakes on a plate and dollop the cream cheese frosting on top. Optional: Garnish with fresh berries or chocolate shavings for an added touch of sweetness and elegance.
Tips
- For an extra festive touch, serve with whipped cream and sprinkles on top.
- If you prefer a lighter version, substitute half of the all-purpose flour with whole wheat flour.
