
Red Velvet Pancakes

Ingredients
- Vanilla extract (1/2 teaspoon)
- Milk (2 tablespoons)
- Powdered sugar (1/2 cup)
- Cream cheese (4 ounces, softened)
- Vegetable oil (2 tablespoons)
- Unsalted butter (2 tablespoons, melted)

- Buttermilk (1 1/2 cups)

Instructions
- In a large bowl, whisk together the flour, cocoa powder, baking powder, salt, and granulated sugar.
- In a separate bowl, whisk together the buttermilk, eggs, red food coloring, vanilla extract, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
- Heat a griddle or non-stick skillet over medium heat and brush with vegetable oil.
- Pour 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until cooked through.
- In a small bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
- Serve the pancakes with a dollop of cream cheese frosting on top.
- Optional: Garnish with fresh berries or chocolate shavings.
