Cocoa powder
2 tablespoons
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Granulated sugar
1/4 cup
Buttermilk
1 cup
Eggs

Red food coloring
2 tablespoons
Vanilla extract
1 teaspoon
Unsalted butter
2 tablespoons, melted
Vegetable oil
for cooking
Cream cheese
4 oz, softened
Powdered sugar
1/2 cup
Milk
2-3 tablespoons
Vanilla extract
1/2 teaspoon (for frosting)

Instructions

  1. In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, salt, and granulated sugar until well combined.
  2. In a separate bowl, whisk together the buttermilk, eggs, red food coloring, vanilla extract, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. Heat a griddle or non-stick skillet over medium heat and lightly brush it with vegetable oil.
  5. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then carefully flip and cook for another 1-2 minutes, or until cooked through and lightly browned.
  6. While the pancakes are cooking, prepare the cream cheese frosting. In a small bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
