Ingredients

Fresh parsley
2 tablespoons, finely chopped
Black pepper
1/2 teaspoon, freshly ground
Salt
1/2 teaspoon
Lemon juice
3 tablespoons
Unsalted butter
3 tablespoons
Reineta fish fillets
4 (6-ounce) fillets

Instructions

  1. Season both sides of the Reineta fish fillets with salt and freshly ground black pepper.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat until it starts to bubble.
  3. Add the seasoned fish fillets to the skillet. Cook for 4-5 minutes on each side, or until the fillets are golden brown and cooked through. Transfer the fish to a serving plate and set aside.
  4. In the same skillet, add the remaining tablespoon of butter and the lemon juice. Cook over medium heat for 1-2 minutes, while scraping the bottom of the skillet to incorporate the flavors left behind by the fish into the sauce.
  5. Pour the hot lemon butter sauce over the cooked Reineta fish fillets.
  6. Garnish the dish with freshly chopped parsley and serve hot. This dish pairs beautifully with a side of roasted vegetables or a fresh green salad.
