Reuben Country Potatoes

- 1 cup, drained and rinsed Sauerkraut
- 1 cup, shredded Swiss cheese

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced potatoes with olive oil, salt, and black pepper until evenly coated.
- Spread the potatoes out in a single layer on a baking sheet.
