Ingredients

Elbow macaroni
8 ounces
Unsalted butter
4 tablespoons
All-purpose flour
1/4 cup
Milk
2 cups
Swiss cheese
2 cups, shredded
Corned beef
1 cup, chopped
Sauerkraut
1 cup, drained
Thousand Island dressing
1/2 cup
Rye bread crumbs
1 cup

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.
  2. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for about 1 minute, stirring constantly until smooth and golden.
  4. Gradually whisk in the milk, bringing the mixture to a boil. Continue to cook and stir for about 2-3 minutes, or until the sauce thickens considerably.
  5. Remove the saucepan from heat and stir in the shredded Swiss cheese, mixing until completely melted and creamy.
  6. Add the cooked macaroni, chopped corned beef, drained sauerkraut, and Thousand Island dressing to the cheese sauce. Stir until everything is well combined and evenly coated.
  7. Transfer the mixture to the prepared baking dish. Evenly sprinkle the rye bread crumbs over the top to create a crunchy topping.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and golden brown.
  9. Remove from the oven and let it sit for a few minutes before serving. Enjoy your delicious Reuben Mac and Cheese!
