Ingredients
- Elbow macaroni
- 8 ounces
- Unsalted butter
- 4 tablespoons
- All-purpose flour
- 1/4 cup
- Milk
- 2 cups
- Swiss cheese
- 2 cups, shredded
- Corned beef
- 1 cup, chopped
- Sauerkraut
- 1 cup, drained
- Thousand Island dressing
- 1/2 cup
- Rye bread crumbs
- 1 cup
Instructions
- Preheat your oven to 375°F (190°C) and grease a medium-sized baking dish.
- Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for about 1 minute, stirring constantly until smooth and golden.
- Gradually whisk in the milk, bringing the mixture to a boil. Continue to cook and stir for about 2-3 minutes, or until the sauce thickens considerably.
- Remove the saucepan from heat and stir in the shredded Swiss cheese, mixing until completely melted and creamy.
- Add the cooked macaroni, chopped corned beef, drained sauerkraut, and Thousand Island dressing to the cheese sauce. Stir until everything is well combined and evenly coated.
- Transfer the mixture to the prepared baking dish. Evenly sprinkle the rye bread crumbs over the top to create a crunchy topping.
