Rhubarb and Mint Sauce

Experience a burst of spring with this delightful Rhubarb and Mint Sauce! This tangy and refreshing sauce combines the tartness of fresh rhubarb with the coolness of mint, creating a perfect complement for desserts, ice cream, pancakes, or even savory dishes. Traditionally, rhubarb has been used in cuisines for centuries, dating back to ancient China, where it was prized not only for its culinary uses but also for its medicinal properties. This modern twist with mint adds a refreshing zing, making it a versatile sauce for any occasion.

Serves 8

Ingredients

Rhubarb
4 cups, chopped
Sugar
1 cup
Water
1 cup
Fresh mint leaves
1/2 cup, chopped
Lemon juice
2 tablespoons

Instructions

  1. In a medium saucepan, combine the chopped rhubarb, sugar, and water.
  2. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
  3. Once boiling, reduce the heat and let it simmer for 10-15 minutes, or until the rhubarb is soft and breaks apart easily.
  4. Remove the saucepan from heat and allow the mixture to cool slightly.
  5. Carefully transfer the rhubarb mixture to a blender or food processor and blend until smooth.
  6. Add the chopped mint leaves and lemon juice to the blender and pulse a few more seconds to combine, ensuring the mint is well incorporated.
  7. Pour the rhubarb and mint sauce into a clean jar or container and refrigerate until chilled, about 1-2 hours.
  8. Serve the sauce as a topping for desserts, ice cream, pancakes, or even grilled meats for a unique flavor.

Tips

  • 💡 For a sweeter sauce, adjust the sugar to your taste.
  • 💡 If you prefer a chunkier sauce, blend only partially or fold in the mint after blending.
  • 💡 This sauce can be stored in the refrigerator for up to a week.
